I don't understand Catholicism?

I don't understand how Christians can steal the Jewish bible, say that they are going to keep all its laws, and then just keep 10 (the 10 commandments) of the 613 commandments clearly stated in it. Also, why would God leave the Jews and instead go to the Christians if God promises the Jews in the Bible countless times that he will never forsake them!
